Ce sont les principales prot\u00e9ines du lait (82 % du total des prot\u00e9ines). Les cas\u00e9ines donnent sa couleur blanche au lait et sont essentielles dans sa transformation en yaourts, fromages &#8230;<\/p>\n<p>Les cas\u00e9ines sont largement utilis\u00e9es, en tant qu\u2019ingr\u00e9dient alimentaire (dans les cr\u00e8mes glac\u00e9es, yaourts, charcuteries, sauces &#8230;), mais aussi dans des cosm\u00e9tiques, la chimie (liant dans les peintures) et m\u00eame autrefois pour fabriquer de jolis boutons pour les v\u00eatements !<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-450\" title=\"Poudre Cas\u00e9ine\" src=\"http:\/\/hl-process.com\/wp-content\/uploads\/Poudre-Cas\u00e9ine-1024x376.png\" alt=\"Poudre Cas\u00e9ine\" width=\"789\" height=\"289\" data-id=\"450\" \/><\/p>\n<h6 style=\"text-align: center;\"><em><span style=\"color: #808080;\">L\u2019hydrolyse d\u2019une cas\u00e9ine fait ressortir des teneurs \u00e9lev\u00e9es en acide glutamique, proline, leucine, lysine, s\u00e9rine et thr\u00e9onine.<\/span><\/em><\/h6>\n<h6 style=\"text-align: center;\"><em><span style=\"color: #808080;\">Il y a plusieurs fragments de cas\u00e9ines dans le lait. Afin de pourvoir les utiliser, en tant qu&rsquo;ingr\u00e9dient alimentaire, il est n\u00e9cessaire de proc\u00e9der \u00e0 une \u00ab\u00a0neutralisation\u00a0\u00bb chimique \u00e0 l&rsquo;aide d&rsquo;une base.<\/p>\n<h4><span style=\"color: #3366ff;\">Plusieurs type de Cas\u00e9inate ?<\/span><\/h4>\n<p>Suivant la base utilis\u00e9e, on obtient diff\u00e9rents types de cas\u00e9inates, aux propri\u00e9t\u00e9s l\u00e9g\u00e8rement diff\u00e9rentes :<\/p>\n<ul>\n<li>Cas\u00e9inate de Sodium<\/li>\n<li>Cas\u00e9inate de Calcium<\/li>\n<li>Cas\u00e9inate de Potassium<\/li>\n<\/ul>\n<h4><span style=\"color: #3366ff;\">La neutralisation : comment faire ?<\/span><\/h4>\n<p>L&rsquo;op\u00e9ration de neutralisation peut se faire de 3 mani\u00e8res :<\/p>\n<ul>\n<li>A partir de caill\u00e9, en ajoutant une base en cuve. Ce proc\u00e9d\u00e9, \u00e0 <strong>basse concentration<\/strong>, n\u00e9cessite ensuite une op\u00e9ration de s\u00e9chage en tour d&rsquo;atomisation. On obtient alors un cas\u00e9inate spray, aux propri\u00e9t\u00e9s int\u00e9ressantes, mais cette voie sera privil\u00e9gi\u00e9e principalement si l&rsquo;on dispose d\u00e9j\u00e0 d&rsquo;une tour d&rsquo;atomisation.<\/li>\n<li>A partir de cas\u00e9ine d\u00e9j\u00e0 s\u00e9ch\u00e9e, \u00e0 dissoudre dans une solution basique. Ce proc\u00e9d\u00e9,\u00a0<strong>basse concentration<\/strong> \u00e9galement, se poursuit comme le pr\u00e9c\u00e9dent. A noter qu&rsquo;ici le produit aura \u00e9t\u00e9 s\u00e9ch\u00e9 2 fois, ce qui, \u00e9nerg\u00e9tiquement, est plut\u00f4t contestable.<\/li>\n<li>A partir de cas\u00e9ine s\u00e8che, par un proc\u00e9d\u00e9 <strong>haute concentration<\/strong> utilisant la technologie \u00ab\u00a0Extrusion\u00a0\u00bb pour r\u00e9aliser la r\u00e9action.<\/li>\n<\/ul>\n<h4><span style=\"color: #3366ff;\">La technologie \u00ab\u00a0Extrusion\u00a0\u00bb, c&rsquo;est quoi ?<\/span><\/h4>\n<p>Ce proc\u00e9d\u00e9 moderne, d\u00e9velopp\u00e9 par PILLET, permet donc de r\u00e9aliser la r\u00e9action de neutralisation avec un minimum d&rsquo;eau d&rsquo;o\u00f9 le terme \u00ab\u00a0haute concentration\u00a0\u00bb.<\/p>\n<p>Une ligne de production de ce type est compacte et caseinates.<\/p>\n<p>The word \u00ab\u00a0casein\u00a0\u00bb comes from the Latin <em>caseus<\/em>, \u00ab\u00a0cheese\u00a0\u00bb. These are the major milk proteins (82% of total protein).
